The classics meringue collection showcases our organic homemade confectioners sugars that we use in our recipes at meringueshop. Baking with the highest quality sugars is foremost to composing our meringue flavors. We grind organic sugars and blend them with a touch of arrowroot into a light sugar powder. This extra step helps our meringues become light and just sweet enough.

Our meringueshop blend of organic cane and maple sugars is the mildest of the flavors. We use this blend in both the vanilla and chocolate meringues. The brown sugar meringues have a more assertive taste. The deep, caramel flavor comes from the raw molasses that is found naturally in brown sugar and creates a bittersweet note. We also wanted to make a purely maple meringue and we are so thrilled with the results. Of the three sugars, maple has the smoothest finish with a hint of umami, the fifth taste sense that is indescribably delicious and naturally enhances the flavor experience.
